I agree with you the term "symbol employee" is not used at all.

Perhaps, but in searching Google I couldn't find the term "symbol employee" at all, and the site Clauwolf mentioned is in Spanish. I don't think this is a term used in English. I was thinking of something more like "Employee Emeritus" although I don't think that's accurate either.

The empregado-símbolo is the employee that symbolizes the company in one way or another, but not necessarily the perfect or model employee.
