Should be as claras, since you can only perform this operation on egg whites.
The bowl you're using must be completely dry and clean, otherwise your efforts will be doomed!

The plot thickens (?!) with the question of stiff or not, but given that the original does not specify, I don't think we should introduce information which is additional to that of the original.
Good advice though from Floriana and co. A little disappointed that no one else seems to be trusting their own (bitter?) experience when explaining, although I like the sound F's key lime pie! And I'm sure there are plenty of gents out there with advice to contribute!
