an independant system of different concepts

Yes it is quite obscure as Jim said...
However, here I would say they mean concepts rather than values...the socialising, the learning, the eating and drinking-a multitude of different concepts (as in 'concept store', 'concept bar') all under one roof.

autonoma here sounds like free-standing or independant to me-so you could actually say a free-standing system. A system which is not tied to the usual constraints of the mass-market maybe-where the system is fluid and adaptable to current local trends?

Here economis IMO is not used in its monetary sense at all but in the sense of a 'complex' a system

economia= Modello strutturale che impronta la presenza e la disposizione delle diverse componenti di un'opera, spec. letteraria, e i loro rapporti reciproci.

Not easy to interpret. Economia must be low price, autonomia must be with freedom of choice and no contractual constraints and eterogenei, must be variety.

I wouldn't say complex, so much as abstract and obscure.
It could be a "clear, simple, freestanding design" where the values are those of the architectural composition of the interior design, rather than the economic values of the price to quality ratio of the coffee/food.

And just think they may be talking about a competitor of that well-know multinational fast food hamburger chain: mutton dressed up as lamb, or is it beef as veal?

a stand-alone economic model accommodating diversified traditions

Not so sure about beefburger or fried chicken outlets. I keep thinking of Florian Coffe House on St. Mark's Square in Venice: a sef-contained economic pwoerhouse catering. literally, to a variety of coffee house traditions.
