Everyone who handles food must make sure that it is safe to eat. There will always be food safety hazards , but they can be controlled if you understand how food becomes contaminated and how to prevent this from happening .
Most contamination of food occurs because of inappropriate actions taken by food handlers. You must therefore follow workplace rules for personal premises hygiene. Keeping yourself and the food preparation area clean also helps to create a good public image and to ensure legal compliance.
At every stage of the process, from delivery of raw ingredients through to service, you must handle food with care. understanding time and temperature control is particularly important.
This book provides practical advice and guidance to help you to keep food safe at all times and comply with food law. It will help you to understand the underlying principles of food safety and to apply these principles to develop good practice in your own work place.
Taking responsibility for food safety :
As a food handler, you play a very important part in protecting consumers from harm. When working with food, you must make sure that nothing in or on the food you prepare, serve or sell to consumers can cause harm.
The importance of food safety
Food safety safeguards consumers’ health and well-being by protecting food from anything that could cause harm. High standards of food safety allow consumers to enjoy their food without experiencing illness, injury or other problems. Poor standards of food safety can lead to all kinds of harm and even death.
Common food hazards:
A food hazard is anything in food that could cause harm to the consumer. There are hazards all around food premises.
The four main types of hazard are physical, chemical, microbial and allergenic.
Physical, chemical, microbial and allergenic hazards can contaminate food and cause injury or illness. For a food business, controlling these hazards- especially contamination by bacteria - is a big challenge.

যারা খাবার নিয়ে কাজ করেন তাদের দায়িত্ব খাবার নিরাপদ কিনা তা নিশ্চিত করা। খাদ্য নিরাপত্তার ঝুঁকি সব সময়ই থাকে, কিন্তু কিভাবে খাবার দূষিত হয় এবং কিভাবে দূষিত হওয়া থেকে প্রতিরোধ করা যায় তা বুঝতে পারলে এসব নিয়ন্ত্রণ করা সম্ভব।
খাদ্যের দূষণ বেশিরভাগ ক্ষেত্রে খাদ্য নিয়ন্ত্রণকারীর ভুল কার্যকলাপের কারনে ঘটে থাকে। সেজন্য আপনার কর্মক্ষেত্রের পরিচ্ছন্নতার নিয়মগুলো ব্যক্তিগত আবাসস্থলেও পালন করতে হবে। নিজেকে পরিষ্কার রাখা, সেইসাথে আপনার খাবার তৈরির স্থানকে পরিষ্কার রাখা মানুষের কাছে ইতিবাচক ভাবমূর্তি তৈরিতেও সাহায্য করে এবং আইনী বৈধতাও নিশ্চিত করে।
প্রক্রিয়াটির প্রতিটি পর্যায়ে কাঁচামালের সরবরাহ থেকে শুরু করে পরিবেশন পর্যন্ত আপনাকে অবশ্যই সাবধানতার সাথে খাদ্য সামগ্রী নিয়ন্ত্রণ করতে হবে। সময়জ্ঞান ও তাপমাত্রার নিয়ন্ত্রণ বিশেষভাবে গুরুত্বপূর্ণ।

খাদ্য নিরাপত্তার দায়িত্ব গ্রহণ :
একজন খাদ্য নিয়ন্ত্রণকারী হিসেবে ভোক্তাদের ক্ষতি হওয়া থেকে রক্ষার জন্য আপনারদায়িত্ব অত্যন্ত গুরুত্বপুর্ণ। খাবার নিয়ে কাজ করার সময় যে খাবার প্রস্তত করে ভোক্তাদের পরিবেশন করছেন বা বিক্রি করছেন তার ভেতরে ক্ষতিকর কিছু নেই তা নিশ্চিত করুন।
খাদ্য নিরাপত্তার গুরুত্ব
খাদ্য নিরাপত্তা খাবারকে ক্ষতিকারক সবকিছু থেকে রক্ষা করে, অতঃপর ভোক্তাদের সুস্বাস্থ্য ও সুস্থ জীবন নিশ্চিত করে। খাদ্য নিরাপত্তার উচ্চমানের কারনে ভোক্তারা অসুস্থতা,পীড়া বা অন্য কোন সমস্যার সম্মুখীন না হয়েই তাদের খাবার উপভোগ করতে পারেন। খাদ্য নিরাপত্তার নিম্নমান সব ধরনের ক্ষতি করতে পারে, এমনকি মৃত্যুও ঘটাতে পারে।
সাধারণ খাদ্য-ঝুঁকিসমুহ:
খাদ্য-ঝুঁকি বিষয়টি হল খাবারে এমন কিছুর উপস্থিতি যা ভোক্তার ক্ষতির কারণ হতে পারে। খাদ্য জগতের চারিদিকেই ঝুঁকি রয়েছে।
প্রধান চার প্রকার খাদ্য-ঝুঁকিসমুহ অনেকটা এরকমঃ শারীরিক,রাসায়নিক,জীবাণুগত এবং এলার্জি সৃষ্টিকারী ঝুঁকিগুলো খাবারকে দূষিত করতে পারে এবং পীড়া বা অসুস্থতার কারণ হতে পারে। এই ধরনের ঝুঁকিগুলো, বিশেষ করে ব্যাকটেরিয়া ঘটিত দূষণ নিয়ন্ত্রন করা খাবারের ব্যবসার জন্য একটি বড় চ্যালেঞ্জ।
