Solo una suposición a partir de la referencia que te adjunto más abajo. En ella hablan de robots que pipetean muestras automáticamente. El "dive out" es la velocidad con que se retira la pipeta una vez liberada la muestra dentro del vaso de precipitados:

Bueno, también se refiere a la velocidad con que se retira la punta de la pipeta del líquido una vez extraída la muestra.
O sea, la "dive out velocity" es la velocidad con que se retira la punta de la pipeta, tanto al extraer la muestra como al liberarla.
Así que cambio mi traducción a "velocidad de retirada de la (punta) de la pipeta.
