I understand that uitstaan can mean outstanding, or issued (shares etc). I'm just not sure of how that fits in with the second sentence below. Would someone be able to clarify this for me?
1) In deze opgave wordt het aantal deelnemingsrechten die voor de verzekering ===uitstaan=== weergegeven en, in voorkomend geval de hoogte van de verzekerde bedragen.
2) Als afkoop is toegestaan, is de afkoopwaarde gelijk aan het saldo van de renterekening dat voor de verzekering ===uitstaat===.

@LJardine: In the second sentence, the expression "het saldo van de renterekening dat (...) uitstaat" refers to the "credit balance of the interest account", i.e. the balance/amount payable to the insured (in this case: as cash surrender value of the policy).

@LJardine: on second thoughts, I think it's more accurate to use the more generic/neutral"outstanding balance" in your second sentence, as the balance may in fact be either positive or negative. See also http://en.wikipedia.org/wiki/Balance_(accounting)

: "credit balance" - daar moeten een aantal denkbewegingen aan vooraf zijn gegaan... Ik meen je te kunnen volgen - balance/amount payable - cash surrender value.

Net Asset Value (NAV) Per Unit – The gross assets of a fund less any liabilities divided by the number of outstanding units.
Par Value – The stated maturity value of a security. A bond’s par value is the dollar amount on which interest is calculated and the amount paid to holders at maturity.
Par Value per Unit – The par value of all bonds held by an RBC Target Maturity Corporate Bond ETF divided by the number of units outstanding.

Misschien betekent 'uitstaat' hier 'is belegd'.
Ben geen 'money man', denk alleen mee.
Open-end beleggingsinstellingen zijn beleggingsinstellingen waarbij toe- en uittreding door de participanten onbeperkt en dus eenvoudig mogelijk is. Het aantal uitstaande deelnemingsrechten (participaties) is niet begrensd en hun waarde wordt in hoofdzaak bepaald door die van de in de beleggingsinstelling berustende activa ofwel de in de beleggingsinstelling aanwezige beleggingen.
Closed-end beleggingsinstellingen zijn beleggingsinstellingen waarbij het aantal uitgereikte deelnemingsrechten wel vastligt. Tijdens de looptijd is in- en uittreden in de regel niet, of onder voorwaarden mogelijk, waardoor participaties in dit soort beleggingsinstellingen niet (gemakkelijk) verhandelbaar zijn.
