Se refiere, en mi opinión, al exceso de ejemplares tirados que son necesarios para ajustar el manipulado en cuestión y para que queden correctos el total de ejemplares que componen la tirada. Yo diría que es una contracción de "overruns".

En la merma también se incluyen los impresos mal realizados por cualquier motivo (la llamada maculatura). Aunque algo de merma es técnicamente inevitable, una merma demasiado grande o incontrolada es señal de un proceso de impresión mal gestionada.
